If spaghetti were meant to be broken before cooking don't you think they would have made them in smaller sizes?
Someone once lost a job interview because of this mistake, you should know that Italians do not play with culture and their meals.
I know Food is all about taste, flavors, textures, etc. And I taste absolutely no difference in the pasta whether I break the noodles or not(yes I have actually done this experiment).
But sometimes you just need to respect the culture and the integrity of a meal.
The Italians don’t break it in half, because you can’t twirl it up with a fork after it has cooked.
They will only break it into smaller pieces, called patina, for use in soups and brothy dishes. Those types of dishes are eaten with a spoon, so you need small pieces of pasta. You can buy pastina, or you can just break up spaghetti if it’s what you have on hand.
The point with leaving the spaghetti whole is so that you can wrap it around your fork and get it into your mouth elegantly and properly with no ill-mannered slurping and splattering of tomato sauce everywhere.
eta: There are soup dishes where you can break the spaghetti, but not when you eat it in a classical way.
