I promise to create a bread recipe for you all and here it is.
High gluten flour: 250g
sugar: 50g
Fresh yeast: 10g
Whole milk powder: 18g
Salt: 3g
Whole egg liquid: 30g
Water: 100g (ice water)
Unsalted butter: 25g
Steps:
1 Put the ingredients except for butter into the mixing machine, Stir to form a smooth ball.
2. Add butter, stir quickly until the dough is smooth and delicate, and pull out the film;
3. The dough was allowed to ferment, for about 50 minutes at 28 degrees.
This is the first stage of fermentation.
4. Take out the fermented dough, evenly divide it into three parts, roll into a circle and place it in the fermentation box to relax for 20 minutes, ( if you don't have a fermentation box use a bowl/colander to cover your dough)
5. Take a portion and roll it into an ox tongue shape, turn it over and roll it up, and make the rest of the dough in turn.
6. Take a rolled dough and roll it out again and roll it up. and do the rest.
7. Put the rolled dough into a toast box and put it in the oven to start the fermentation function.
8. When the dough is 80% full, take out the mold and brush a little egg wash on the bread embryo.
9. Preheat the oven to 180 degrees for 10 minutes, put the toast box in the middle and lower layers of the oven, and turn it to 170 degrees for 40 minutes.
10 During the baking process, pay attention to observing the coloring covering the surface with tin foil so as not to burn.
